Pu-Erh tea in its most simplistic description is fermented black tea. Pu-Erh can be fermented in two ways: cake or loose leaf. The cake form requires a much longer fermentation process whereas looseleaf has quicker flavor development.
To enjoy as a cup of tea: steep 1 tsp of tea in boiling hot water for 3-5 minutes. Add milk and sugar if desired.
To brew for kombucha: Use 2 TBSP tea per gallon of kombucha, Steep for a minimum of 10 minutes in about 2 cups of hot water. Then, dilute with cool water until it reaches room temperature before pitching your culture.
