Black tea is the traditional tea for kombucha brewing. Assam black tea comes from the Assam region of India, which, being at sea level with high temperatures and humidity, produces a tea with distinct malty flavor.
Assam black tea comes from the plant Camellia sinenses just like green, white, & oolong teas. What differentiates these teas is the level of oxidation, black being the most highly oxidized or “fermented.”
To enjoy as a cup of tea: steep 1 tsp of tea in boiling hot water for 3-5 minutes. Add milk and sugar if desired.
To brew for kombucha: Use 2 TBSP tea per gallon of kombucha, Steep for a minimum of 10 minutes in about 2 cups of hot water. Then, dilute with cool water until it reaches room temperature before pitching your culture.
